Chicken Parmesan

This is pretty simple but worth posting because I make it pretty regularly and it always goes over well.  The difference between the way I make it and the way the rest of the internet makes it is, as near as I can tell, that the rest of the people in the world don’t use enough cheese!  Idiots.  The important thing here is that the ratio of breadcrumbs to Parmesan should be 1:1.

6 boneless skinless chicken breasts

1 cup italian breadcrumbs

1 cup parmesan cheese (I use dried, it works fine)

6 thick slices mozzarella cheese

2 eggs, beaten

Preheat your oven to 350F

In a bowl, mix together the parmesan and breadcumbs until they’re evenly mixed.

Dip the chicken breasts in the beaten eggs, then dredge them in the breadcrumb and cheese mixture, then put them on a cookie sheet.

Once the oven is heated, put the chicken in and bake for 30 minutes.  Then, put a slice of mozzarella on each one, and bake for another five minutes.  Should come out pretty much perfect.  Cover in your favorite tomato sauce.
