Noodles with stuff in it

The name is kind of an inside joke.  When we were kids we didn’t know what this was but we loved it, and we were constantly asking my mom to make “noodles with stuff in it.”  Incidentally, we also referred to vegetable fried rice (which we also loved) as “rice with stuff in it”.  I guess what I’m saying is that I wasn’t all that creative as a child.

 

Ingredients

1 pound bacon, diced

1 pound cottage cheese

12 ounces dried egg noodles (1 package. I swear that these used to come in 1 pound packages,  but lately I can only find them in 12 oz packages)

1-2 teaspoons nutmeg (I use more but I’m told some people don’t like all that much)

Directions

Fry the bacon until it’s as crispy as you like it, and drain off all but 1-2 tablespoons of the bacon fat.  You should probably save the unused bacon fat for future use, because it beats the hell out of butter for most things.

Cook the egg noodles in salted water until done and drain.  Return them to the pot, and stir in the bacon and cottage cheese until well mixed.  Sprinkle in the nutmeg, still stirring, until throoughly mixed.

Then eat!  It makes kind of a gooey delicious mess.  It can be a meal in itself if you like, but it’s great with sausages and sauerkraut.  I know this because it’s what I’ve been eating all week.
