Liquor Store Chili (AKA Henry’s Chili)

There’s a liquor store near me, owned by a guy named Henry.  he has outstanding taste in alcohol, and he’s always cooking something in the back room.  This is basically his favorite thing to eat in the  world.  He made it for a beer tasting he was holding, and it was great.  I told him I liked it, and he gave me the recipe.  It really is pretty good chili.

Ingredients

2-3 pounds ground beef

5-6 celery ribs, chopped

1 large red bell pepper, chopped

1 large onion, chopped

1 small can chipotle peppers, with the sauce

1 28 ounce can tomato sauce

1 24 ounce bottle of corona

2 tablespoons cumin

1 tablespoon cumin

8-10 cloves garlic, minced

salt

pepper

1 can black beans

1 can red beans

Directions

Brown the meat in a pot while you chop your vegetables.

Once the meat is cooked, add in everything except the beans, bring to a boil, and reduce to a simmer.  Simmer everything for about 45 minutes to an  hour so the flavors meld.

Add the beans, a simmer for another 15 minutes or so, and remove from the heat.  Should be done.

I eat it with macaroni and cheddar cheese.  And chopped onions on top.
