Chicken Fajitas

I never really knew what carne asada was growing up.  Turns out that’s because it’s what my mom just called “steak fajitas”.  Works just as well with chicken.

Now, when I made these, I sliced the chicken in to strips before marinating and cooking.  Mostly because I was pan frying the chicken and I wanted it to cook quickly.  But That step is optional, and if you’re cooking on a grill you’re probably better off leaving the breasts whole.  Like I said, this also works great with beef.

Ingredients

1 pound chicken breasts, cut in to strips (raw chicken tenders work fine if you get those instead)

2 tablespoons lemon juice

2 tablespoons lime juice

2 tablespoons oil

1/2 tablespoon garlic powder

1/2 tablespoon dried oregano

salt

pepper

tortillas

cheese

Directions

Not a whole lot to it.  Put the chicken in a bag with the juice, oil, garlic, oregano, salt, and pepper.  Let it marinate overnight, then either cook the strips hard in batches in a pan over medium high heat, or grill the breasts until done.  Let them rest, then slice and serve on tortillas with cheese and sautéed peppers and onions.

Oh, and the more butter you use to sautee the peppers and onions, the better.
