Mie Goreng (Indonesian stir fried noodles)

Okay, I’ll own it, the subtitle there is pretentious as fuck. But I don’t know what else to call it.  This stuff doesn’t taste like any other stir fried noodles I’ve had.  It’s sweeter with a different flavor.

The sauces here are likely available in your supermarket in the asian section, but the one thing you can’t swap out is the sweet soy sauce.  It’s got a weird flavor that’s like a cross between regular soy sauce and molasses.  You might be able to substitute some combination of soy sauce and sugar, but I’ll leave that up to you and the internet.

Ingredients

1 small onion, finely chopped

10 cloves garlic, smashed

1 pound chicken, diced

1/2 a head napa cabbage, chopped

2 cups additional vegetables (optional, your choice.  Can add carrot, celery, broccoli, or whatever you want)

1 pound mushroom, sliced

1 pound spaghetti, broken in half

1/3 cup soy sauce

1/3 cup sweet soy sauce (also known as kecap manis)

1/3 cup oyster sauce

salt and pepper to taste

2 tablespoon oil

Directions

First, cook the spaghetti, but not all the way.  Cook it, but stop about 2 minutes short of the cooking time on the box, because you want it a little underdone.  Later, you’ll add it to the sauce combination, and it will finish cooking there; if you cook it all the way now, you’ll end up with a bunch of mush.  Once you pour it in a colander, rinse with cold water, tossing, until it’s cool to the touch. That means it’s stopped cooking and won’t get softer.

Add the onions, garlic, oil, and mushrooms to a pot and sauté on medium heat until the mushrooms are cooked and the onions are starting to brown.  Add a little bit of water if it starts to burn.

Once that’s done, add the chicken, and cook through, about 10 minutes.  Add the cabbage and any other vegetables and cook until the vegetables are cooked through.  Stir in the soy sauce, oyster sauce, and sweet soy sauce and bring to a boil.  Add the undercooked spaghetti and stir until the moisture is mostly absorbed and the pot is mostly dry.  It should only take a minute or two.  The noodles should be a little shiny with oil and sauce.

All done!  Remove from the heat and set aside.  it’s good to go.
