This is a delicious dish with a stupid name. It’s essentially jamaican collard greens. It’s kind of similar to jerk chicken in that the main flavors are thyme and heat.
Ingredients
5-6 cloves garlic, crushed
1/2 an onion, chopped
2-3 roma tomatoes, chopped
1-2 scotch bonnet/habanero pepper, minced
1 teaspoon dried thyme
2-3 pounds collard greens/kale/whatever bitter green you want to use. Swiss chard works great as well
3-4 strips of bacon (optional, I didn’t use it but bacon is never a bad thing)
Salt and pepper to taste
Hickory smoke powder to taste (totally a niche ingredient, I just have a convenient supply. It gives it a more meat like taste).
Oil for cooking
Directions
Add the oil to a large pan and bring to medium high heat. Add the garlic, onions, and optional bacon. Cook until the onions are soft and the bacon is starting to render. Add the tomatoes and scotch bonnets and cook until moisture from the tomatoes is mostly cooked off.
Add the greens and thyme and saute until the greens are thoroughly wilted. Taste it for salt and pepper, adding the hickory powder as needed.
