This is just a nice simple little dish that I like, it goes well with any kind of korean barbecue. It’s a little funky because of the fish sauce, which I like, but it might be a turn off for some people.
Strictly speaking you’re supposed to make this with mu, which is the korean radish, but I couldn’t find that so I used daikon, which worked fine. From reading online they are pretty much the same thing.
Ingredients
5-6 cups coarsely grated daikon (you can julienne this instead if you’re feeling fancy, but a coarse grater is much easier. This is basically a medium sized daikon.)
2 green onions, chopped
2 tablespoon fish sauce
2 tablespoon sugar
2 tablespoon rice vinegar
2 tablespoon sesame seeds (optional)
1-2 teaspoon salt
6 cloves garlic, minced
1/2 inch ginger, minced
2 tablespoons korean red pepper powder (optional, controls the heat)
Directions
Mix together everything except the green onions and daikon (the fish sauce, sugar, rice vinegar, salt, sesame seeds, garlic, ginger, and pepper powder) in a small bowl and whisk until combined to make your dressing.
Pour your dressing over the grated radish and scallions and toss together.
