I guess this is a Greek thing? It came up when I googled “things to eat with falafel,” and was listed as a Greek dish. Shrug. The turmeric is purely for color, you can feel free to leave it off.
Ingredients
1 cup long grain white rice, rinsed until the water is clear
2 tablespoons butter
1 medium onion, finely chopped
4 cloves garlic, minced
2 cups broth
1/3 cup lemon juice
1 teaspoon turmeric
pinch of salt
handful of chapped parsley to garnish
Directions
Melt the butter in a large saucepan over medium heat, and saute the onions and garlic for five minutes until softened and starting to go translucent.
Add the rice to the pan and fry for a minute, then add the broth, lemon juice, turmeric, and salt. Bring to a boil, then cover and simmer over low for twenty minutes, then remove from the heat and let sit for another ten minutes covered.
Remove the lid, fluff with a fork, and garnish with the parsley before serving.
