This is my absolutely favorite thing to get from a Thai place. I like it better than pad thai, basil rice, or anything else. I think it’s the noddles, I can’t get enough of them.
On the subject of the noddles: you may have to go to an Asian grocery store to get them. You can occasionally find them in a normal grocery store, but there’s no guarantee. Or you can order them online, they ship just fine. On a similar note, this calls for Maggi sauce, and you’ll probably have to do the same dance to find that. You can substitute soy sauce if you want but the maggi sauce really does help.
I’m presenting it here without any protein (tofu or meat) but you should absolutely add some if you want to make it a meal. Cook it in advance, and stir it in when you add the vegetables down below.
Ingredients
2 tablespoons oyster sauce
2 tablespoons fish sauce
1 tablespoon Maggi sauce (can substitute soy sauce)
1 teaspoon sugar
2 tablespoons neutral oil
3 tablespoons water
1/2 teaspoon dark soy sauce (optional, for color)
200 grams bean thread noodles (probably 4 bundles)
2-3 eggs, beaten with 1 tablespoon oil
1/2 an onion, thinly sliced
4 cloves garlic, chopped
3+ cups of chopped vegetables. You can use baby corn, napa cabbage, ordinary shredded cabbage, carrot, bell pepper, bean sprouts, bamboo shoots, or whatever else you want.
Directions
Soak the noodles for 10 minutes in room temperature water. They should end up soft and pliable; drain the water and use some kitchen shears to cut the bundles of noodles in a few places to make them shorter, otherwise they’ll be impossible to stir fry. Set them aside.
Mix together the oil, oyster sauce, fish sauce, maggi sauce, sugar, water, and dark soy sauce together to make a sauce and set aside.
Heat some oil in a pan over medium heat, and once it’s hot, scramble the eggs. Remove from the pan once they’re done.
Add some more oil to the pan and crank the heat up to high. Stir fry the onions and garlic together until the onions soften, just a couple minutes. Add the vegetables and stir fry a few more minutes until they also soften.
Reduce the heat to medium, add the noodles and sauce, and stir fry for a few minutes until the sauce is absorbed and the noodles are clear
Add the scrambled eggs back in and mix everything up, then remove and transfer to a serving bowl. Enjoy!
