I guess that’s as good a name for this as anything? I found it online and it’s shockingly good. A great one pot meal with a lot of options so you can customize it the way you want. You can add ground beef, pulled chicken, fake meat, or none of them and just rely on the beans for protein. I’m going to give the recipe using fake meat, but feel free to mix it up.
You should also mix up the vegetables however you want. I used poblano, jalapeno, corn (yes I know it’s not a vegetable), and beans, but you can modify that as you like. Bell peppers go great instead of poblano, you can leave off the corn entirely, or use hominy instead. I add extra red onion at the end once it’s done cooking, but I really really like onions
Also, it only calls for half a pound of pasta, but with everything else you’re adding, that’s enough for four or five servings, at least for me. It’s filling and cheap and tasty!
Ingredients
1/2 pound pasta, shells or rotini or something like that
2 tablespoons oil
2 onions, chopped
6 cloves garlic, minced
12 oz (usually one package) fake meat
2 jalapenos, sliced (optional)
2 poblano peppers or 1 green bell pepper, chopped
1 15 oz can tomatoes, crushed
1 15 oz can corn, drained
1 15 oz can red or black beans, drained and rinsed
1/4 cup salsa
1/4 (or more) black olives (optional)
1 1/2 tablespoons chili powder
1 teaspoon oregano
Salt to taste
Sour cream, shredded cheese, green onions, and cilantro for serving (all optional but highly recommended)
Directions
Cook the pasta, drain, set aside
Heat the oil in the a pot on medium high heat, then add the garlic, onions, and optional meat to a pan and cook about 5 minutes, until all of the meat has started to cook and the onions are softened. Add the poblano and jalapeno, reduce heat to medium, and cook stirring frequently until the meat is well browned, another 5-10 minutes.
Add the tomatoes, corn, beans, salsa, olives, and spices to the pot and bring to a boil, then stir in the pasta until it’s well coated and the sauce has been mostly absorbed.
That’s really it. Top with cheese, sour cream, green onions, cilantro, or whatever else you want.
