
Nothing really to say here, it’s just something I wanted to not have to look up next time. And it’s really easy to make at home. It’s great on pita chips or gyros.
Also, don’t sweat how finely you need to chop things up. It’s all going to go in a blender.
Ingredients
1 cup greek yogurt (can use regular yogurt if you want but it tastes best with greek yogurt)
1/2 cup finely chopped cucumber, seeds removed. You can leave the peel on, it won’t hurt anything
2 teaspoons salt, divided
2 cloves garlic, chopped
2 green onions, chopped
1/2 teaspoon ground black pepper
Juice from half a lemon
1 tablespoon olive oil (can use vegetable oil)
1 tablespoon minced fresh dill (optional)
Directions
Put your cucumber in a bowl and sprinkle with a teaspoon of salt, then stir or mix with your hands to combine. Let it sit for five minutes to draw out some of the moisture, then drain and rinse with water.
Chuck everything in a blender or food processor and pulse until smooth.
