Drop biscuits

The picture is a little misleading. That was a pot pie, but these are the biscuits that went on top.

Just putting this here so I can remember what I did. They’re not complicated, it was just hard to find a recipe that didn’t call for an unholy amount of butter.

Ingredients

2 cups flour

1 tablespoon baking POWDER

1 teaspoon salt

1 teaspoon sugar

1 cup buttermilk

3 tablespoons oil

Melted butter or oil to brush them with

Directions

Preheat your oven to 425 F.

Whisk together the dry ingredients, then add the oil and buttermilk and mix until just combined. The mixture should be pretty wet.

Using a spoon, scoop out the biscuit mixture and drop it onto a sheet pan, preferably one lined with parchment paper. Should make 12 biscuits. Or, if you’re doing a pot pie, just drop them all over the top.

Brush them with the melted butter and pop them in the oven. Bake for 15-20 minutes until golden brown.
