Macaroni and cheese is a cheap and simple meal that pretty much everyone has eaten. It’s kind of crappy and not very nutritious.
Carbonara is a tasty pasta dish made with eggs, bacon, black pepper, cheese, and sometimes other ingredients, like chicken or peas. This week I made something that is a bit different, but it turned out good.
What you will need:
2 boxes mac and cheese
2 chicken breasts
1 onion
1 can white hominy
2-3 cups of peas
1 pound bacon
1 cup cheese
1 cup milk
salt
Preparation:
Dice up an onion and put it in a bowl. Dice up the chicken and put it in a small pot or pan with a lid. Dice up the bacon and put that in a frying pan.
The chicken will take the longest. Boil it until it’s good and tender. This took me an hour, but some chicken is tougher than others. When the chicken is done, drain the water off and let it sit.
Put the peas, hominy, and some salt in a pot of water and put it on to boil. Everything will end up getting mixed together in this pot, so make sure it’s a big one.
While you wait for the water to boil, fry the bacon. Once the water is boiling, add the pasta to the pot and add the onion to the bacon. By the time the pasta was done, so was everything else.
Now, mix it all together. Mac and cheese boxes instruct to add butter or margarine, but you have bacon grease, so just use that! The last step is to add milk and cheese. I add a little of one, a little of the other, and repeat until I get to the desired cheesiness and consistency.
That’s it! Now you have macaroni and cheese, but with more protein, some veggies, and it all tastes like bacon!
